Something new for Christmas: Discovering La Travesía: The Journey of an Agave Distillate

In recent years, the world has seen a renaissance in craft spirits, with a particular focus on artisanal distillates. Among them, agave spirits have captivated the hearts of spirit enthusiasts and casual drinkers alike.

While tequila and mezcal are widely celebrated, there’s an emerging gem from Mexico that is gaining attention for its unique profile and rich cultural heritage—La Travesía Destilado de Agave.

La Travesía, which translates to "The Journey" in English, is a sophisticated and deeply rooted agave spirit that pays homage to its origins. Distilled from the agave plant, La Travesía encapsulates both traditional practices and the innovation of modern distillation techniques. But what makes it stand out in the vast landscape of agave spirits, and why should it find a place on your shelf? Let’s delve into the story, craftsmanship, and tasting experience of La Travesía.

The Origin of La Travesía

La Travesía comes from the heart of Mexico, where agave plants grow in abundance, nourished by mineral-rich soils and sun-drenched climates. Unlike some of its better-known counterparts, this destilado de agave does not have a Denomination of Origin, which allows it a broader range of production techniques and agave varieties. While tequila must be made from blue agave and mezcal from specific agave types in designated regions, La Travesía represents a freer form of agave expression, capturing the terroir of its region in a way that tequila and mezcal regulations would not permit.

The name “La Travesía” embodies the idea of journeying—a journey of flavours, traditions, and the agave itself as it transforms from raw plant to fine spirit. Each bottle of La Travesía tells the story of the agave’s lengthy growth process, sometimes taking up to 15 years to mature, and the skill of the distiller in coaxing out complex aromas and tastes.

Craftsmanship and Distillation Process

Distilling La Travesía is a labour-intensive process that honours centuries-old techniques passed down through generations. The production process varies from producer to producer, but the emphasis on traditional methods is a common thread.

First, the agave hearts, or piñas, are harvested, cut, and roasted, often in underground pits lined with stones or clay ovens. This roasting process imparts the smoky, earthy flavours that define the spirit’s character. The roasted agave is then crushed, traditionally using a large stone wheel known as a tahona. This mechanical or hand-crushing method allows for the maximum extraction of juices without damaging the agave fibres. After fermentation in open wooden vats, which encourages wild yeast strains to develop, the agave juice is distilled in small copper or clay pot stills, lending La Travesía a distinctly artisanal quality.

What sets La Travesía apart from industrially produced agave spirits is the care and attention given to each small batch. Many distillers use ancestral methods, which infuse the spirit with unique flavours that vary based on the type of agave used, the soil and climate, and the production method. Each bottle reflects the individuality of the artisan who crafted it, making La Travesía as much an expression of the distiller’s artistry as of the agave plant itself.

Tasting Notes

La Travesía Destilado de Agave is a sensory experience that combines earthy, vegetal, and smoky notes with a rich mouthfeel. Here’s what to expect when you pour a glass:

Nose: Upon first inhale, you’ll detect a bouquet of wild herbs, subtle smoke, and hints of citrus. There’s also an underlying mineral quality, a reminder of the rugged terrain from which the agave originates.

Palate: On the palate, La Travesía offers a bold yet balanced profile. It opens with a touch of sweetness from the agave, quickly evolving into complex layers of earthiness and spice. Depending on the variety of agave used, you may also find notes of roasted nuts, green pepper, and a touch of brine.

Finish: The finish is smooth and lingering, with a gentle warmth that envelops the senses. A touch of smoke remains, echoing the traditional roasting methods and inviting you to take another sip.

How to Enjoy La Travesía

While it can be tempting to use La Travesía in cocktails, this is a spirit that really is best appreciated on its own or with minimal dilution. Serve it neat or over a single large ice cube to release the intricate layers of flavour. The traditional Mexican method of drinking agave spirits, known as “besitos” or little sips, encourages a mindful tasting experience that honours the effort poured into each bottle.

For a cultural pairing, enjoy La Travesía alongside a plate of fresh fruit, spiced nuts, or even chocolate with high cacao content. The spirit’s bold flavours contrast beautifully with sweet, spicy, and bitter accompaniments, making it ideal for a contemplative evening or a memorable tasting session with friends.

Why Choose La Travesía?

La Travesía Destilado de Agave offers a refreshing perspective in the world of agave spirits, standing out as a celebration of heritage, craftsmanship, and unique flavour. It’s more than just a drink—it’s an invitation to journey through Mexico’s vibrant landscape and history, distilled into every sip. In choosing La Travesía, you’re not just selecting a bottle; you’re embracing a timeless tradition and a truly artisanal product.

In a world dominated by mainstream spirits, La Travesía is a call to the curious and the connoisseur alike. Raise your glass to the journey, and savour each sip of this exquisite agave distillate. Cheers!

Learning to Say no Part 2: Learn the Po of No: Embracing Peace Over Pressure This Christmas

In a world that prizes productivity and people-pleasing, it’s easy to forget the art of saying “No.”

But what if this simple word could unlock a whole new way of experiencing peace, balance, and joy—especially during the holiday season? To truly embrace the Po of No is to see it not as rejection but as a gateway to inner peace.

The Christmas season is full of expectations, both from others and ourselves. From gift-giving to gatherings, we feel a pressure to participate and be present everywhere.

But too much “Yes” leads to stress, and learning the Po of No allows us to protect our time, energy, and mental space. Here’s how the Po of No can help us restore balance this Christmas.

1. Po of No: The Power of Presence

When you say “Yes” to everything, you’re often so overwhelmed that you can’t truly enjoy anything. The Po of No teaches us that when we decline, we make space to truly be present. Instead of rushing to four different Christmas parties in one weekend, why not choose one or two that matter most? By saying “No” where needed, you’re saying “Yes” to being fully present with the people and experiences that truly bring joy.

2. Po of No: The Beauty of Boundaries

Boundaries are like invisible fences that protect our emotional landscape. During the festive season everyone wants a piece of your time, but without boundaries, you’ll end up feeling depleted.

The Po of No is about recognising that boundaries aren’t selfish—they’re essential. Instead of feeling compelled to meet everyone’s expectations, set limits on how much you’re willing to give. This way, you can pour more energy into what matters, rather than spreading yourself too thin.

3. Po of No: The Simplicity of Saying Less

Saying “No” doesn’t require a complex explanation. In fact, over-explaining often leaves you feeling drained. Part of the Po of No is recognising it as a simple, complete sentence. By letting “No” stand on its own, you honour your time and intentions without feeling the need to justify yourself. Trust that those who care about you will respect your decision, and allow yourself to move forward guilt-free.

4. Po of No: Finding Your Own Peace

At its heart, the Po of No is about rediscovering inner peace. Saying “No” means reclaiming time to do the things that bring you calm—whether that’s reading by the fire, baking at your own pace, or simply sitting in silence with a cup of tea. When you prioritise peace over pressure, you bring a sense of calm that resonates in every interaction, making your Christmas truly joyful rather than chaotic.

How to Practise the Po of No This Christmas Season

If you’re inspired to find the Po of No in your life, try these mindful approaches:

Honest Reflection: Before saying “Yes” to an invitation or commitment, pause. Ask yourself: Does this align with what I want my Christmas to feel like?

Gentle, Clear Refusals: Practise saying “No” in a kind, clear manner, remembering that you’re not responsible for managing others’ expectations.

Enjoy What You Embrace: Once you say “No” to the excess, truly enjoy the moments and events you do choose to embrace, knowing they were chosen mindfully.

Reclaiming the Season with the Po of No

Learning to say “No” isn’t about missing out; it’s about making room for what truly matters. By letting the Po of No guide you this Christmas, you’ll find peace in presence, joy in simplicity, and freedom in knowing that you don’t have to do it all. This Christmas, embrace the Po of No and give yourself the gift of a season filled with intention and peace.

Learning to Say “No” This Christmas: Embracing the Power of a Complete Sentence

Christmas is a time of cheer, warmth, and togetherness, but it can also be a time when people-pleasing tendencies kick into overdrive.

For many, saying “Yes” to every Christmas invitation, request, or extra commitment feels natural. After all, who wants to be a Scrooge when the whole world seems wrapped up in holiday cheer?

Yet, the magic of Christmas often fades into exhaustion and stress when we spread ourselves too thin, forgetting one simple truth: “No” is not just a word but a complete sentence.

Why Saying “No” Matters

Learning to say “No” is essential to managing holiday stress and preserving your wellbeing. This one word creates boundaries that protect your time, energy, and mental health. Christmas is a time to give, but that doesn't mean giving up your sanity or peace of mind. The power of a respectful “No” is about preserving those values. A well-placed “No” can save you from draining commitments, unwanted gatherings, and a stretched budget, allowing you to focus on what truly matters.

The Christmas Pressure to Say “Yes”

We’ve all been there. A family member or friend invites you to yet another festive gathering, or perhaps a colleague proposes a gift exchange. While these can be joyful, sometimes your heart sinks because you simply don’t have the time, energy, or resources to participate. Social expectations during Christmas can be high, and the pressure to say “Yes” can come with a fear of disappointing others or seeming selfish.

But this Christmas season, imagine how freeing it could be to respectfully decline, honouring your limits and staying true to your needs.

“No” as a Complete Sentence

It’s easy to fall into the trap of over-explaining when we decline. Many of us feel compelled to give reasons, apologies, and justifications. But here's the truth: “No” is a complete sentence. You don’t need to justify or rationalise it, nor do you owe anyone an exhaustive explanation for taking care of yourself.

Saying “No” doesn’t mean you don’t care or that you’re being unkind. It simply means you recognise that some things don’t fit within your capacity at the moment. This year, let “No” be your answer without feeling guilty, knowing it’s a small act of self-respect.

How to Say “No” Gracefully This Christmas

If you’re feeling inspired to try it out, here are some gentle ways to say “No” this season:

The Polite Decline

“Thank you so much for thinking of me, but I’m going to have to say no this time. I really appreciate the invite, though.”

The Budget-Friendly No

“I’d love to join in, but this year I need to focus on keeping things simple. I hope you have a wonderful time!”

The Firm, Short-and-Sweet No

“No, thank you.”

This is the essence of “No” as a complete sentence. It’s polite but firm, with no elaboration needed.

The Busy-Season No

“Christmas is looking really busy for me this year, so I’ll have to pass. But thanks for understanding!”

Embracing a Mindful Christmas Season

Christmas should be a time of joy, not a checklist of obligations. By learning to say “No” when you need to, you give yourself the space to appreciate the holiday season on your own terms. Perhaps you’ll discover that fewer commitments allow for more meaningful moments with family, a relaxing evening with a good book, or the simple pleasure of having time to decorate without feeling rushed.

Remember, “No” isn’t about letting others down—it’s about lifting yourself up. This Christmas, give yourself the gift of simplicity by embracing the power of “No” as a complete sentence. You may find it’s the best present you could offer yourself.

How to Prepare Your Home for Christmas Guests: Essential Cleaning Tips & Hacks

As Christmas approaches, the joy of festive gatherings also brings the challenge of preparing our homes for a flow of guests.

Between decorating and stocking up on supplies, finding time for a thorough clean can feel daunting.

Here’s a guide to help you efficiently tackle each room, with some savvy cleaning hacks to ensure your home feels fresh, welcoming, and ready for the Christmas spirit.

1. Declutter First, Clean Later

Before getting into the scrubbing and polishing, start by decluttering each space. Put away items you don’t need during the holiday period, and designate a specific space for gifts, winter gear, and other seasonal items. This will not only make your home feel more spacious but also make the cleaning process far quicker and more manageable.

2. Living Room: The Cosy Hub

The living room is often where guests will gather, so focus on making it spotless and inviting. Here are a few quick tips:

Dust First, Vacuum Later: Start by dusting from the top down. Dust ceiling fans, light fixtures, shelves, and skirting boards first. This way, dust will fall to the floor, making it easy to vacuum up afterwards.

Hack: Use a Lint Roller on Upholstery: Upholstered furniture like sofas and armchairs can gather dust and pet hair. A lint roller is surprisingly effective at removing hair and crumbs from fabric surfaces quickly.

Refresh Carpets and Rugs: Sprinkle baking soda over carpets and rugs, leave it for 15-20 minutes, and then vacuum thoroughly. Baking soda neutralises odours and leaves fibres looking fresh.

3. Kitchen: The Heart of the Feast

Between cooking and chatting, your kitchen will be a hotspot. A clean, organised kitchen is essential for a smooth holiday season:

Clear Out the Fridge: Make room for festive treats by clearing out expired items and wiping down shelves. Consider using fridge liners to help keep shelves clean longer.

Hack: Steam Clean the Microwave: Place a bowl of water with lemon slices in the microwave and heat it for five minutes. The steam will loosen grime, making it easy to wipe away, while the lemon adds a fresh scent.

Polish Stainless Steel with Vinegar and Olive Oil: If you have stainless steel appliances, spray them with a solution of equal parts water and vinegar. Wipe clean, and then rub a few drops of olive oil for a gleaming finish.

4. Bathroom: A Refreshing Retreat

A spotless bathroom is essential when hosting guests. Focus on key areas:

Scrub Grout with Baking Soda and Vinegar: Mix baking soda and water to create a paste, apply it to grout, then spray with vinegar. Let it fizz for a few minutes, scrub with an old toothbrush, and rinse with water.

Hack: Quick Shine for Glass and Mirrors: Use a damp microfibre cloth followed by a dry one for streak-free mirrors. Add a few drops of essential oil like eucalyptus for a spa-like aroma.

Restock Essentials: Ensure there are extra hand towels, a fresh soap dispenser, and plenty of toilet paper. Consider setting a festive candle in the bathroom for a seasonal touch.

5. Guest Room: Make it Feel Like Home

If guests are staying over, prepare the guest room to make it feel cosy and inviting.

Change Bedding and Add Extra Blankets: Fresh sheets and a couple of extra blankets will keep guests warm and comfortable. Add a small basket of toiletries, so they have everything they might need.

Hack: Freshen Up Linens with a Fabric Spray: After making the bed, spray pillows and blankets with a homemade fabric refresher (mix water, a bit of vodka, and a few drops of essential oils). This will add a pleasant, clean scent to the room.

Clear Space for Suitcases: Free up some wardrobe or drawer space and add a few empty hangers so guests can unpack if they wish.

6. Finishing Touches Throughout the Home

Once each main room is clean, add a few festive touches to bring warmth and seasonal cheer.

Vacuum and Mop Floors: This is the final step to ensure each room is clean from top to bottom.

Hack: Use Dryer Sheets for Skirting Boards: Wipe skirting boards with a dryer sheet to repel dust, keeping them cleaner longer.

Add Subtle Seasonal Scents: Light some Christmas-scented candles or create a DIY simmer pot (simmering water with cinnamon sticks, orange peels, and cloves) for a warm, festive aroma.

By focusing on these key areas and incorporating these simple hacks, you’ll save time and stress, creating a warm, inviting space that’s ready for all the joys of the holiday season.

How to put together the perfect vegan Christmas dinner

Creating a perfect vegan Christmas dinner doesn’t have to mean compromising on flavour or festivity.

Whether you're catering for plant-based eaters or looking to try something different, there are plenty of ways to craft a delicious and indulgent meal that celebrates all the joy and tradition of the season.

Here’s a step-by-step guide to making a standout vegan Christmas dinner that’s sure to wow everyone around the table.

1. Starters: Savoury and Elegant

Begin with something light yet impressive. For vegan Christmas starters, you can’t go wrong with flavours like roasted beetroot, figs, chestnuts, and winter herbs.

Option 1: Mushroom and Chestnut Pâté

Rich, earthy, and full of flavour, a mushroom and chestnut pâté is both sophisticated and satisfying. Serve with toasted sourdough, a handful of microgreens, and a drizzle of balsamic reduction for a beautiful presentation.

Option 2: Creamy Butternut Squash Soup

Warm up with a velvety butternut squash soup topped with toasted seeds or pomegranate arils. Add a touch of nutmeg and fresh thyme to bring out that perfect winter taste.

The Centrepiece: Show-stopping Mains

A festive main course is the star of any Christmas meal, and for a vegan Christmas dinner, it’s all about rich, hearty flavours and a stunning presentation.

Option 1: Stuffed Butternut Squash Roast

Cut a butternut squash in half, scoop out the seeds, and stuff it with a savoury filling of wild rice, cranberries, and sage. After baking, it has a lovely golden hue and a slightly sweet, nutty flavour. You can add chestnuts or walnuts for extra richness.

Option 2: Lentil and Nut Wellington

For something that feels quintessentially Christmas, a vegan Wellington can be a brilliant centrepiece. Make a filling of mushrooms, lentils, and nuts, seasoned with garlic, rosemary, and thyme. Wrap it in puff pastry and bake until golden and flaky. Slice into rounds to reveal the rich filling and serve with a rich red wine reduction.

3. Sides: Festive Flavours

No Christmas dinner is complete without an array of delicious sides. Go for classics that bring in seasonal tastes and colours.

Roasted Brussels Sprouts with Maple and Pecans

A perfect blend of crispy, sweet, and nutty, roasted Brussels sprouts are a Christmas staple. Toss with a little olive oil, maple syrup, and pecans for a delicious caramelised result.

Honey-Glazed Carrots and Parsnips (with Maple Syrup)

For a vegan twist on honey-glazed vegetables, use maple syrup to achieve the same sweetness. Roast with rosemary and thyme for a fragrant and festive flavour.

Garlic and Rosemary Hasselback Potatoes

These stylish potatoes are not only delicious but also easy to prepare. Simply slice thinly without cutting all the way through, brush with olive oil and sprinkle with rosemary and garlic, then bake until crisp.

Vegan Cauliflower Cheese

A Christmas favourite made vegan, this cauliflower cheese is creamy and satisfying. Use a plant-based milk and a vegan cheese sauce with nutritional yeast for a comforting, cheesy flavour.

4. Desserts: Decadent and Dairy-Free

After a satisfying Christmas feast, it’s time for a sweet ending. Go for indulgent desserts that feel luxurious and festive.

Option 1: Vegan Christmas Pudding

Rich, dense, and full of spices, a classic Christmas pudding is surprisingly easy to veganise. Use dried fruit, nuts, and warming spices, and serve with a vegan brandy sauce. You can even make this ahead of time to save yourself the trouble on the day.

Option 2: Chocolate Yule Log

For chocolate lovers, a vegan yule log is a perfect dessert. Make a light, vegan sponge filled with dairy-free chocolate ganache, then roll it up and frost with more ganache. Dust with powdered sugar and add a few festive decorations, like fresh rosemary or holly berries.

5. Drinks to Complete the Meal

No Christmas meal would be complete without the right beverages. Serve a mix of warming mulled wines, festive cocktails, and cosy non-alcoholic options.

Classic Mulled Wine

Simmer red wine with orange slices, cloves, cinnamon sticks, and a bit of star anise for a deliciously aromatic drink that fills the house with the scent of Christmas.

Festive Cranberry Mocktail

Prep Ahead: Christmas is a busy day, so prep whatever you can in advance. You can make the pâté, soup, and even the Wellington filling a day or two beforehand.

Check Labels: Many ingredients, like puff pastry, can be vegan, but it’s always wise to double-check labels to ensure they’re free from animal products.

Keep It Festive: A vegan Christmas dinner can still be full of traditional colours, tastes, and aromas. Use herbs, spices, and garnishes to give each dish that cosy holiday feel.

Whether you're serving seasoned vegans or adventurous eaters, this spread is sure to bring warmth and joy to the table. Wishing you a very merry, plant-based Christmas!

Your Drink Choice Could Make or Break Your Morning: The Best and Worst Hangovers Ranked

An expert reveals how your drink selection can significantly impact on your morning hangover, with tips on what to avoid and how to recover faster.

Key Points:

Alcohol expert reveals how darker spirits like whiskey and red wine are notorious for causing severe hangovers

Cheaper spirits and tequila often lead to pounding headaches and nausea, with recovery taking longer than expected

Tips and guidelines to follow to prevent the hangover of all hangovers

Almost all of us have experienced the morning-after effects of a night out or an evening of at home partying, but what many don’t realise is that the choice of beverage plays an important role in how severe those effects are.

According to expert Daniel Ufland, of online whisky retailer The Whisky Masters, the drink you choose can make all the difference when it comes to the intensity of your hangover the next day,

“Darker spirits, like whiskies or red wines are notorious for causing worse hangovers because they contain these chemical compounds called congeners, which make symptoms more intense,” Daniel explains.

“On the flip side, clearer spirits, like vodkas or white wines have fewer congeners, which leads to a milder, more manageable hangover. It’s not just about how much you drink but what you drink.”

Backed by scientific studies, the presence of congeners in certain alcohols is key in determining how you’ll feel the next morning. They are present in higher quantities in darker alcohols, contributing to symptoms like horrendous headaches, heavy heaves, and general malaise.

So, what should you avoid if you want to dodge a brutal hangover? Check out Daniel’s top 5 drinks to avoid, as well as the ones to look out for:

The Worst Drinks for Hangovers

1. Red Wine: Severe Headaches and Sensitivity to Light

Loaded with tannins and histamines, red wine will leave your head, lips and hips in a bit of a stir if you over-do it.

Daniel’s Tip: “If you can’t resist a good glass of red, make sure you drink water between glasses to stay hydrated. Hydration is key in preventing disastrous hangovers.”

2. Cheap Spirits: Pounding Headaches

Budget-friendly but body-punishing, cheap spirits often contain more impurities than premium products. These impurities make recovery slower, and the symptoms last longer.

Daniel’s Tip: “Opt for higher-quality spirits with fewer additives and, of course, stay hydrated to lessen the morning blow.”

3. Dark Spirits (Whisky): Severe Headaches

Whisky is one of the more congener-rich alcohols. The deep, smoky, woodgrain flavors may be appealing during the night, but the next day can bring a lingering malaise, making it one of the worst choices for avoiding a hangover.

Daniel’s Tip: “If you choose whisky, follow it up with at least a pint of water before bed to minimize the impact the morning after. A big meal beforehand is also a big help.”

4. Tequila: Headaches and Loss of Appetite

While 20 shots of tequila might seem like a good idea at the time, they often lead to a rough morning. It also causes a loss of appetite, a common post-tequila symptom.

Daniel’s Tip: “If tequila is on the menu, limit yourself to one or two shots and eat something beforehand to slow alcohol absorption. And don’t forget the salt and lime!”

5. Rum: Dizziness and Dehydration

Rum, especially the darker varieties, can lead to dizziness and severe dehydration. Its sugar content may also contribute to headaches, leaving you feeling worse for wear the next morning.

Daniel’s Tip: “Drink rum cocktails with lighter mixers like sugar-free sodas or soda waters to avoid adding more sugar to the mix. There’s enough in it already.”

The Best Drinks for Hangovers

1. Clear Spirits (Vodka): Mild Headaches and Quicker Recovery

Vodka is one of the better options if you’re hoping to avoid a hangover altogether. It contains fewer congeners, resulting in milder symptoms such as slight headaches and a quicker recovery.

Daniel’s Tip: “Pair vodka with hydrating mixers like sugar-free sodas or a light tonic, and don’t forget to drink a glass of water before bed for a smoother morning.”

2. White Wine: Mild to Moderate Headaches and Dehydration

Lighter and less likely to leave you suffering from a severe headache, white wine still causes a bit of dehydration. However, it tends to be kinder than its red counterpart when it comes to hangover severity.

Daniel’s Tip: “Stick to one or two glasses to reduce the chance of dehydration-related headaches.”

3. Champagne: Headaches

The carbonation in champagne accelerates alcohol absorption, which can result in quicker intoxication and, unfortunately, faster hangover onset. However, its lower alcohol content means hangovers from champagne tend to be less severe than darker spirits.

Daniel’s Tip: “Sip champagne slowly and avoid drinking on an empty stomach to mitigate the effects.”

4. Beer: Bloating and Sluggishness

Beer often causes bloating and sluggishness due to its high carb content, but its lower alcohol content makes it a more forgiving option than spirits. You may experience dull headaches, but they’re usually manageable compared to the symptoms caused by stronger drinks.

Daniel’s Tip: “Nothing wrong with a few light beers if you’re aiming for a more manageable morning and pace yourself throughout the night. But if you go for the heavier stuff make sure you line your stomach beforehand.”

5. Craft Cocktails: Variable

Craft cocktails, depending on the ingredients, can be a wildcard. Some may leave you feeling perfectly fine, while others - especially those with sugar-heavy mixers - can lead to projectile vomiting. The complexity of the ingredients can also affect how your body processes the alcohol, making it harder to predict the after-effects.

Daniel’s Tip: “If you’re going for cocktails, stick to simpler recipes with clear spirits and low-sugar/sugar-free mixers.”

Daniel Ufland of The Whisky Masters Commented:

“Your drink choice plays a huge role in how you feel the next morning. Darker spirits like whiskey and red wine are loaded with congeners—substances that increase the severity of hangovers. On the other hand, clearer spirits like vodka contain fewer congeners, making for a milder recovery.

“We’ve all heard the saying ‘drink in moderation,’ but it’s also important to know that drinking water between alcoholic beverages and before bed can make a massive difference. What’s more, avoiding sugary mixers and sticking to higher-quality alcohol can help reduce those dreaded morning-after symptoms. By being mindful of what you drink and how you stay hydrated, you can enjoy your night without paying the price the next day.”

That's Christmas would like to thank Daniel Uffland and the Whisky Masters website. https://thewhiskymasters.com

Incidentally here's a tip from That's Christmas: If you are drinking alcoholic drinks avoid having carbonated drink in between, as the bubbles can help the alcohol get into your bloodstream quicker. Drink non-carbonated drinks instead.

How to Make the Perfect British Christmas Dinner: Recipes and Tips for the Ultimate Christmas Feast

The British Christmas dinner is a truly grand affair, steeped in tradition and overflowing with flavour.

From a perfectly roasted turkey and crispy roast potatoes to the rich and indulgent Christmas pudding, each dish holds a special place in our festive celebrations.

If you're looking to create the ultimate British Christmas feast, here's a guide with recipes and tips to help you bring some holiday magic to the table.

1. The Centrepiece: Roast Turkey

The turkey is the star of the show, and preparing it well will ensure a delicious and juicy centrepiece for your Christmas dinner.

Ingredients:

1 whole turkey (approx. 4-5kg for 6-8 people)

100g butter, softened

2 lemons, quartered

Fresh herbs (thyme, rosemary, and sage work well)

Salt and pepper

1 onion, halved

4-5 cloves of garlic, peeled

Method:

Prepare the Turkey: Preheat your oven to 180°C (fan) or 200°C. Rinse and pat dry the turkey. Season the cavity with salt and pepper, then stuff it with lemon quarters, onion, garlic, and fresh herbs.

Butter the Skin: Gently lift the skin over the breast and spread half the butter underneath. Rub the remaining butter over the skin, ensuring the turkey is evenly coated. This will give it that golden, crispy finish.

Season and Cover: Generously season with salt and pepper. Cover the turkey loosely with foil to prevent it from over-browning.

Roast: Roast the turkey for around 2.5-3 hours, basting every 30 minutes with its own juices. Remove the foil for the last 45 minutes to achieve a beautifully crisp skin. Use a meat thermometer to ensure the internal temperature reaches 75°C at the thickest part.

Rest: Once cooked, let the turkey rest for at least 20-30 minutes before carving. This will allow the juices to settle, resulting in tender, juicy meat.

2. Perfect Roast Potatoes

Roast potatoes are an essential side dish. They should be fluffy on the inside with a satisfyingly crunchy exterior.

Ingredients:

1kg Maris Piper or King Edward potatoes, peeled and quartered

3-4 tbsp goose fat or duck fat (vegetable oil as a substitute)

Salt

Fresh rosemary or thyme (optional)

Method:

Parboil: Boil the potatoes in salted water for about 8-10 minutes until slightly softened but not fully cooked. Drain and let them steam dry in the colander for a few minutes.

Rough Them Up: Shake the colander gently to roughen the edges. This step is key for extra crispy potatoes.

Preheat Fat: Place the goose fat in a roasting tin and heat it in the oven at 200°C until sizzling hot.

Roast: Carefully add the potatoes to the hot fat, turning them to coat evenly. Roast for 45-50 minutes, turning halfway through. Add a few sprigs of rosemary or thyme for extra flavour in the last 10 minutes.

Serve: Season generously with salt and serve immediately for maximum crunch!

3. Classic Christmas Vegetables

Traditional Christmas vegetables like Brussels sprouts, parsnips, and carrots add colour and variety to the meal. Here’s a quick way to prepare them.

Ingredients:

500g Brussels sprouts, trimmed and halved

4 large carrots, peeled and cut into batons

4 parsnips, peeled and quartered

Olive oil, for roasting

Salt and pepper

Honey (optional)

Method:

Prepare Vegetables: Toss the parsnips and carrots in olive oil, season with salt and pepper, and roast at 200°C for 25-30 minutes until tender. For a festive touch, drizzle with honey for the final 10 minutes.

Sauté Brussels Sprouts: Steam or blanch the Brussels sprouts until slightly tender. Then sauté them in a pan with a little butter or olive oil. Add chopped chestnuts or a sprinkle of crispy bacon for extra flavour.

4. Rich and Fruity Christmas Pudding

Christmas pudding is the traditional British dessert, and it’s worth making it ahead of time to allow the flavours to develop fully.

Ingredients:

100g raisins

100g sultanas

100g currants

50g chopped dried figs

75g dark brown sugar

100g breadcrumbs

100g suet (vegetable suet for vegetarians)

1 apple, grated

Zest of 1 lemon and 1 orange

1 tsp mixed spice

2 large eggs

100ml stout or dark ale

2 tbsp brandy

Method:

Mix Ingredients: Combine all the dry ingredients in a large mixing bowl. Add the grated apple, citrus zest, eggs, stout, and brandy. Mix thoroughly until well combined.

Let It Rest: Cover the bowl with a clean tea towel and leave it to sit overnight for the flavours to meld.

Steam: Grease a pudding basin, spoon in the mixture, and cover with a layer of baking parchment and foil. Steam for 5-6 hours, checking the water level occasionally.

Store: Once cooled, store the pudding in a cool, dark place. On Christmas Day, reheat by steaming for 2 hours before serving.

Serving Tip:

Serve with brandy butter, custard, or a dollop of double cream. For a show-stopping finish, warm a few tablespoons of brandy, pour it over the pudding, and light it just before serving. Or serve with Christmas ice cream, if available.

Extra Tips for the Ultimate Christmas Dinner

Plan Ahead: Make your Christmas pudding a few weeks ahead of time and prepare your vegetables the day before. This will reduce stress on the big day.

Brine the Turkey: If you have the time, brining the turkey overnight can enhance its flavour and juiciness.

Serve Family-Style: Present all the dishes on the table for a cosy, communal atmosphere.

Don’t Forget the Crackers: Christmas dinner wouldn’t be complete without a festive cracker for each guest!

Why You Should Buy the Man in Your Life a Shed for Christmas

Christmas shopping can often feel like a challenge, especially when it comes to finding the perfect gift for the man in your life.

You’ve probably covered all the usual suspects, gadgets, cosy socks, perhaps a luxury bottle of his favourite tipple, but this year, why not think bigger, bolder, and give him something he'll truly treasure?

Yes, I'm talking about a shed. A garden shed may sound unconventional, but it’s a gift with serious potential. Here’s why a shed might just be the ultimate Christmas surprise.

1. A Place of His Own

A shed can become the sanctuary he didn’t even know he needed. Life is busy, and we all need a quiet space to retreat, tinker, or simply clear our minds. For many men, a shed can be that special retreat where they can relax without interruption. Whether it’s outfitted as a workshop, a reading nook, or even a mini-office, having a dedicated space in the garden can provide a sense of ownership and freedom.

2. A Personal Workshop

For the DIY enthusiast or budding carpenter, a shed is a dream come true. It offers a place to keep tools organised, experiment with projects, and even upcycle furniture without having to clean up immediately. Plus, having a dedicated workshop space might even mean fewer DIY bits scattered around the house—a win for both of you! Imagine how thrilled he’ll be at the idea of his own creative workspace to tackle projects, big or small.

3. An Outdoor Entertainment Hub

Sheds are no longer just storage spaces for rusty lawnmowers and spare pots. With a bit of creative setup, they can become cosy outdoor pubs, mini-gyms, or gaming dens. Adding a small bar, some comfy chairs, or a vintage record player can transform a shed into the ultimate relaxation zone for weekends and evenings. His mates will likely enjoy the space as much as he does, making it a great spot for gatherings, movie nights, or simply unwinding after a long day.

4. A Hobby Haven

If he’s got hobbies that take up more room than your home can comfortably spare, whether that’s model-making, painting, photography, or something else entirely, a shed can be the perfect haven. With a dedicated area to dive into his interests, he won’t need to pack away his projects every time he’s finished for the day. This hobby-focused space can be customised to fit his needs, from ample shelving and work tables to equipment storage.

5. More Space, Less Clutter

Let’s face it—household clutter can become a bit overwhelming, and sometimes all that stuff just needs a home of its own. A shed provides an additional storage solution that will help keep your indoor space clear and organised. Tools, bikes, gardening supplies, and seasonal items can all find a place in the shed, helping to reduce the inevitable overflow in cupboards, under beds, or in the garage.

6. An Opportunity for Customisation

There are all kinds of sheds available, from rustic wooden models to sleek, modern designs. You can even opt for a customisable shed that allows him to get involved in its setup. Many people find the process of decorating and setting up their shed as enjoyable as using it. You could surprise him with the foundation or basic frame and let him add his own finishing touches—like painting, adding shelves, or designing the interior exactly as he wants.

7. The Gift That Keeps Giving

Unlike a lot of gifts that might lose their charm after a few months, a shed is something he’ll use for years to come. Every season brings new ways to enjoy it, whether it’s sipping a hot drink inside during the winter or hosting a casual BBQ outside during the summer. It’s a practical, versatile gift that will keep bringing joy, purpose, and convenience into his life year-round.

8. It’s the Gift of Solitude and Balance

As much as we cherish our time together, everyone benefits from a bit of time alone. A shed gives him a way to have a balanced life with his own space. Without needing to leave home.

It’s a healthy and thoughtful way to show your support for his mental well-being, self-care, and creativity. And let’s be honest, giving him that personal corner of the world can work wonders for household harmony!

Finding the Right Shed for Him

When selecting a shed, consider the size of your garden and the shed’s intended use. Think about what features will make it functional and enjoyable for him, like windows for natural light, extra storage options, or enough height to accommodate shelving. Many home and garden stores offer sheds in a variety of shapes, sizes, and styles, so you’re bound to find one that fits your budget and his taste.

Final Thoughts

A shed may not be the first idea that springs to mind when thinking of Christmas presents, but its benefits are undeniable. It’s practical, long-lasting, and tailored to his unique interests, making it a deeply personal and meaningful gift.

This Christmas, give him the gift of his own space—a retreat, a workspace, or simply a corner of peace. It’s not just a shed; it’s an opportunity for him to cultivate his passions, enjoy his hobbies, and create memories in a space that’s truly his own.

Future Foodmakers: Morrisons launches its first ever wooden toy range to inspire a new generation of foodmakers

Morrisons is launching its first ever wooden toy range with all the ingredients kids need to create their own Market Street, from bakery to butchery counters.

The new Ollie & Grace range starts at just £4 and is available exclusively in Morrisons stores all over the country.

Ever wondered what’s going to stir and bake the childhood imagination of chefs and bakers of the future? Morrisons believes one of the magical ingredients could be their inspiring new range of shop, farm and food related wooden toys.

Morrisons new ‘Ollie & Grace’ wooden toy range is set to inspire a new generation of foodmakers. And just in time for Christmas present shopping, the fun and collectible set will enable kids to spend endless hours role-playing at home while learning about the journey of food from farm to fork.

The new range, which is a first from Morrisons, is designed to develop creativity and spark the imagination of young children whilst they are ‘playing shop’, with prices starting from a very modest  £4.

The exclusive set includes miniatures of Morrisons iconic Market Street setting (a recreation of the origins of Morrisons from a humble market stall, alongside a mini wooden Morrisons Shopping Trolley (£15), Delivery Van (£4), Tractor (£4) and a Tabletop Checkout Till (£25).

Capturing Morrisons Market Street, the Mini Market Street Bakery Set (£25) offers little ones the opportunity to re-create their very own Market Street moments, with a must-have Morrisons apron and hat.

The Bakery Set offers interchangeable parts so mini Morrisons enthusiasts can enjoy playing with all the Market Street counters including a Butcher (£10), Fishmonger (£10), Deli (£10) and Oven Fresh (£10) set.

Amy Crowther, who has the very enviable job of Buying Manager at Morrisons, said: “We’ve absolutely loved bringing this range to life for our mini food-makers of the future. Our new Ollie & Grace wooden toy range is a gift that promises hours of fun, while also encouraging creativity and curiosity.”

The new Ollie & Grace range is available in-store at Morrisons now, customers need to be quick, as when it’s gone, it’s gone!

'Twas the Night Before Christmas: A Modern Remix

'Twas the night before Christmas, and all through the flat,

Not a creature was stirring, not even the cat.

The stockings were hung by the chimney with care,

In hopes that St. Nicholas soon would be there.

The children were nestled, all snug in their beds,

With iPads and phones tucked under their heads.

And Mum in her hoodie, and I in my cap,

Had just settled in for a quick winter nap.

When out on the street, there arose such a clatter,

I sprang from the bed to see what was the matter.

To the window I flew, just a bit under-dressed,

Peeked out through the blinds, feeling far from impressed.

The streetlights reflected on fresh-fallen snow,

And I squinted to see what was making the glow.

When what to my wondering eyes should appear,

But an electric sleigh, slick and eco-sincere.

With a driver so lively, his cheeks all aglow,

I knew in a flash it must be St. Joe.

Faster than e-scooters, his eight drones they came,

And he whistled, and shouted, and called them by name:

"Now, Dasher! Now, Dancer! Now, Prancer and Vixen!

On, Comet! On, Cupid! On, Donner and Blitzen!

To the top of the flats, to the edge of the wall,

Now dash away, dash away, dash away all!"

So up to the rooftops, the drones they did zoom,

With the sleigh full of gifts and St. Joe with a boom.

And then, in a twinkling, I heard from the roof

The hum of the engines, so quiet and smooth.

As I drew in my head and was turning around,

Down the chimney St. Joe came in with a bound.

Dressed in tech fleece and boots, all ready to go,

With a sleek Christmas jumper in crimson and snow.

A bundle of gadgets he had flung on his back,

From VR to laptops, the latest tech stack.

His eyes, how they twinkled, his smile so merry,

His cheeks were like roses, his nose like a cherry.

He had a kind face and a compacted belly

That shook when he laughed, like a bowl full of jelly.

With a wink in his eye and a wave of his hand,

He unpacked all the gifts, precisely as planned.

He spoke not a word, but went straight to his task,

Leaving gifts everywhere, just like we’d asked.

Then tapping his watch and a nod to the drones,

He rose up the chimney, as light as a phone.

He sprang to his sleigh, to his drones gave a shout,

And away they all flew with a whir and a clout.

But I heard him exclaim, as they faded from sight,

“Happy Christmas to all, and to all a good night!”

Larchfield Estate's Christmas Fair will be held on 4th and 5th November

On 4th and 5th November Lisburn's Larchfield Estate will again host Christmas in the Barn, the popular annual event organised by Lucinda Kinnaird, that brings people from miles around to purchase beautiful crafts produced by local artisans, and which every year also raises funds for charities bringing benefit to people in Northern Ireland.

This year their chosen charity is drug education charity the Daniel Spargo-Mabbs (DSM) Foundation, and the money raised by the fair will enable the charity to fund a new production of their powerful commissioned verbatim play, ‘I Love You, Mum – I Promise I Won’t Die’ by Mark Wheeller, which will tour schools across Northern Ireland for two weeks in Spring 2025.

This verbatim play tells the true story of the joyful life and tragic death from MDMA of sixteen-year-old Dan Spargo-Mabbs, whose loss left his parents with a passionate commitment to prevent any harm happening to anyone else’s child, and led them to start a drug education charity in his name. Ten years on they are now well established across England, growing rapidly and successfully across Scotland, but not yet working in Northern Ireland. This year’s Christmas in the Barn intends to change this.

The DSM Foundation has commissioned Ballymena and Coleraine-based educational theatre company, Ever Unique Productions, to create a new production for Northern Ireland schools, based on the highly successful production their two youth theatres performed in 2023. The play had such a profound impact on their young cast members, as well as their audiences, that Ever Unique Productions co-founders and co-directors Hannah Reilly and Martina McAfee, were keen to bring it to more young people in Northern Ireland.

All of this is being promoted and supported by Sandra Larmour from County Armagh, whose daughter Jeni sadly died when she was 18 on her first day at Newcastle University having taken ketamine.

Sandra has been working closely with Fiona Spargo-Mabbs, Director and Founder of the DSM Foundation and Dan’s mum, as fellow bereaved mums both determined to prevent the harm that happened to their own children happening to anyone else’s. They have engaged the support of PCSPs across the country, and other public bodies.

Also attending Christmas in the Barn, to speak with Fiona and Sandra and find out more about their stories, hopes and plans, will be Minister for Education Paul Givan of the DUP, and Michelle Guy of the Alliance Party, both MLAs for Lagan Valley.

Sandra Larmour, mum to Jeni Larmour, said: "Whilst I will never condone drug use, I fully support and endorse this important work that Fiona and her team are doing in educating and supporting school children giving them insight and knowledge that can only be of benefit to them in making future choices."

Sarah Mackie, co-owner of the Larchfield Estate, said: "As parents we feel the need to equip our children with the knowledge to make informed decisions in the life choices they'll make as they grow up. When I came across Fiona’s book ‘I Wish I'd Known', the tragedy of Dan's death resonated and we hope funds raised by the 2024 Larchfield Christmas Fair will raise awareness of the sadly essential need for drugs education in schools in Northern Ireland, and springboard funding to be able to deliver this to help protect children across the region."

Martina McAfee, Ever Unique Productions co-founder and co-director said: “Getting to perform the Irish premier of the play was something our young people welcomed with open arms. They truly became invested in telling Dan’s story. Additionally, all the drug education workshops we did around the play inspired them to be more open and honest with their peers and parents about the topic of drugs.

"We knew as soon as our project was over that we weren’t ready to finish shouting about Dan. He had found a place to live in our hearts and he wasn’t going to be leaving anytime soon. We knew this story wasn't just one that needed to be heard by our young people but indeed, all young people across Northern Ireland.”

Fiona Spargo-Mabbs OBE, DSM Foundation Director, Founder and Dan’s mum said: “We’re so excited to have this opportunity to bring this new production of our play to schools across Northern Ireland, and so heartened by the warm response we’ve received as we explore the potential for our wider drug education programme to support the work going on to equip young people in Northern Ireland to manage decisions about drugs and alcohol more safely. Sandra and I stand together as two mums who share the lived experience of that going badly wrong for our children, determined to do what we can to protect others better.”

Christmas in the Barn takes place Monday 4th November 10am – 8pm, Tuesday 5th November 10am – 5pm.

The fair's open to all, set within the lovely Estate of Larchfield (by kind permission of Gavin and Sarah Mackie) and all in aid of charity. The organiser Lucinda Kinnaird is really excited that proceeds this year will be funding the first productions in Northern Ireland schools by DSM Foundation. The DSM Foundation team will be in attendance, and Fiona Spargo-Mabbs welcomes visitors to come and meet her at the DSM Foundation stand in the Piggery.
