Pumpkin Spiced Swiss Roll With Cornish Clotted Cream

It's pumpkin spiced latte season, so why not try all the warming flavours of autumn and created this stunning Swiss roll? 

That's Christmas would like to thank Trewithen Dairy for their help in providing this recipe. 

Cinnamon, nutmeg, ginger and clove combined in a fluffy sponge, rolled up with rich Cornish clotted cream. It's so light, you'll want to go back for seconds - or thirds!

Pumpkin Spiced Swiss Roll with Cornish Clotted Cream

Ingredients

200g Caster Sugar

100g Plain Flour

½ tsp Fine Salt

1 tsp Bicarbonate of Soda

1 tsp Baking Powder

1 ½ tsp Ground Cinnamon

1 tsp Ground Ginger

¼ tsp Ground Nutmeg

½ tsp Ground Cloves

3 Eggs

150g Pumpkin Puree

200g Trewithen Dairy Cornish Clotted Cream

100g Mascarpone

1 tsp Vanilla Extract

Icing Sugar for dusting

Preheat oven to 180c. Line a 35 x 25cm Swiss roll tin with baking paper.

In a large bowl, combine all the dried ingredients - sugar, flour, salt, bicarbonate of soda, baking powder and spices. 

In a stand mixer, whisk the eggs and sugar together for 3 minutes, until light and fluffy. Add the pumpkin puree and vanilla extract. Then gently stir through the dried ingredients.

Spread into the prepared baking tin and bake for 12-15 minutes until cooked through.

While still warm, turn the cake out onto a clean tea towel and gently peel off the baking paper. Score a slight indentation across one of the short sides, then very carefully roll the cake into a tight log, taking the tea towel along with it. Allow to cool in the rolled position.

In a large bowl, combine the Cornish clotted cream, mascarpone and vanilla extract until smooth. 

When the cake is completely cool, gently unroll and spread with a thick layer of the cream filling. Carefully roll it back up and place seam-side down. Dust with icing sugar and serve.

Ingredients

70ml Hattiers Egremont Premium Reserve Rum

500 ml sweet cider 

100g Demerara Sugar

One apple - finely sliced

Two allspice berries

Dash of vanilla essence

Three drops of Angostura Bitters

Method

Combine all of the ingredients and mix well in a large saucepan.

Warm gently over a medium heat, stirring occasionally and being careful not to boil.

Use a sieve or strainer to pour the mixture into a glass and serve hot.

The King's Hat Ingredients 

25ml Hattiers Egremont Premium Reserve Rum

25ml The King's Ginger

25ml Dry Vermouth

25ml Fresh Lemon Juice

15ml Sugar Syrup (also known as simple syrup or gomme)

Unwaxed Orange

Method

Build all of the ingredients in a cocktail shaker with ice.

Shake vigorously.

Strain into a pre-chilled coupe glass.

Garnish with a twist of orange.

Christmas Chutney Rolls

This wonderful Cottage Delight recipe is for  Christmas Chutney Rolls.

It uses Festive Fig & Port Chutney

Prep: 20 minutes Cook: 30 minutes Serves: 12

Ingredients

320g ready roll puff pastry

400g turkey mince

4 streaky rashers, chopped up small

75g dried stuffing mix

1 egg, beaten

Handful chopped fresh sage 

Cracked black pepper

4tbsp Cottage Delight festive fig & port chutney

150g stilton

Gravy, optional dip

1 egg for egg wash

Method

Preheat your oven to 200ºC/ 180ºC fan/gas 6 . Line a baking tray with baking parchment.

In a bowl mix together your turkey, bacon, stuffing, egg, sage and pepper until well combined.

Roll out your ready roll puff pastry and cut in half into two long strips.

Down the centre of each strip spread on the Festive Fig & Port Chutney.

Mould your turkey mix into two long rolls then place down the centre of each of your pastry sections on top of the chutney.

Place some thinly slice stilton on top of the turkey.

Brush one side on the pastry on each strip with some egg wash

Fold pastry over and seal the edges with a fork. Repeat with your other section.

Place on to your baking tray leaving enough space between them to expand.

Egg wash each roll and then cut slits.

Bake for 30 mins until golden.

Cut into how many portions you wish. We recommend 12.

Leave to cool for a few minutes then tuck in! Dip into gravy for Christmas heaven.

The trailer, which was specially adapted for the Derby business by Bespoke Conversions; a family-run company based over in Cheshire, is fitted out with a fully-stocked bar, plus a triple fridge to keep stock at its perfect temperature. It's been dubbed 'Tilly' by the Colleague Box team.

Colleague Box, recently awarded a five-star food hygiene rating by Derby City Council, have teamed up with local firms including healthy drinks business So Good Kombucha and Project D doughnuts, who can provide personalised doughnuts for any event.

Tilly's first outing was a wellbeing event for Lister House Surgery Derby before she was taken to Sort Group, whose conveyancing business is based at Derby Conference Centre.

CEO and co-founder Natalie Bamford said: “We're really very excited about Tilly and the different direction that she can take our business in.

“Whilst we have seen a lot of interest in corporate events, ideal for those whose workforce has returned to the office after working from home during the pandemic, it's also perfect for occasions like weddings, baby showers, birthdays, gender reveal parties and big Christmas parties. Tilly's decorated and stocked accordingly to suit each event. It's so exciting for us to be able to do this!

“Our first couple of events were very popular well received. Sort Group have been clients of ours for a while and they loved the idea of having Tilly visit their offices in Derby.

Brie & Pickle Pastry Wreath

Prep: 15 minutes Cook: 15 minutes Serves: 6

Ingredients

320g ready roll puff pastry

6tbsp Cottage Delight Perfect Party Pickle (320g jar)

200g brie cheese, sliced

2 tbsp pistachio nuts roughly chopped

1 egg, beaten

Method

Pre-heat your oven to 200ºC/180ºC fan/gas 6 and line a baking sheet with parchment paper.

Roll the pastry and cut a large circle out of the pastry.

Lay the large pastry circle on the prepared baking sheet.

Mark an inner circle with a medium-sized bowl, but please do not press all the way through the pastry.

Cut four cuts into the centre circle, this will create 8 triangles.

Spread the Perfect Party Pickle around the outer circle then top with the brie and pistachios.

From the four cuts, bring one triangle of the centre outwards over the filling as well as bringing the outer edge of pastry inwards. Press the two together and continue all the way around with the remaining 7 triangles until you have a wreath.

Brush with beaten egg then place in the oven and allow to bake for 15 minutes until golden brown and cooked through.

Remove from your oven, allow it to rest for 5 minutes then slice and serve.

Boxing Day Pickle Pie

Prep: 20 minutes Cook : 1 hour Serves: 6-8

Ingredients

2 x sheets of pre-rolled shortcrust pastry

1 x 320g jar Cottage Delight Perfect Party Pickle 

8 slices of leftover Christmas ham

300g cooked Christmas Turkey

300g leftover pork stuffing (or 1 packet mix, made according to the instructions on the packet)

250g mature cheddar, grated

1 egg, whisked

Method

Preheat your oven to 200ºC/180ºC fan/gas 6

Grease and flour a deep, round 18cm, loose bottomed or a spring form pie tin. 

Line the tin with one sheet of shortcrust pastry and spread ½ jar of Perfect Party Pickle across the base.

Fill with layers of ham, Perfect Party Pickle, turkey, stuffing and cheese, until the tin is full. Ensure you firmly pack in the layers, pressing them into the pie as you go along.

Cut a lid, using the pie tin as a guide, place this on the top of the pie and crimp around the edges.

Cut festive decorations out with the pastry off-cuts and arrange these on top of your pie.

Glaze the top (generously!) with an egg wash and cut a hole in the top.

Bake in the oven an 1 hour, (check and add tin foil over top if catching after 40 minutes) until golden brown.

Allow to cool inside the tin and serve hot or cold for your Boxing Day lunch.

Let's go Spanish for Christmas

With Christmas on the horizon, iconic Spanish chefs José Pizarro and Omar Allibhoy have revealed some of the best-loved traditional foods that have become hallmarks of the festive season in Spain.

Festivities and celebrations in Spain are the source of many food traditions and dishes that are unique to the country, and influenced by its distinctive culture and produce. 

Both Pizarro and Allibhoy are Spanish natives who have set up acclaimed and successful restaurant groups in London and the UK, known for their commitment to showcasing the classic dishes and ingredients of Spain in contemporary-feeling Spanish restaurants including José, Pizarro, and Tapas Revolution. As proud ambassadors for the country and its food culture and as chefs, both have also written best-selling recipe books celebrating Spanish cuisine.

The traditions specific to Christmas time in Spain are numerous, and include classic dishes from roasted whole fish and suckling pig to sweet treats like turrón, the cake roscón de reyes and more. Christmas Eve, Christmas Day, New Year's Eve and New Year's Day also come with their own food traditions, as does the Epiphany, or Reyes Day, which celebrates the Three Wise Men's journey.

The festive feeling

“For me, Christmas means bringing people together to celebrate,” says Pizarro. “It's about spending time with my family and friends. Everything has to be simple and delicious.”

“​​Christmas in our family is a time for special meals, full of laughter and being together, seeing the cousins and uncles you don't get to see, catching up, playing games and being jolly,” says Allibhoy. “It's the perfect recipe to make memories. And for those of us who emigrated, coming back home for that is something we truly look forward to every year.”

Classic Christmas food in Spain

“For us Christmas lasts longer than in the UK, as our celebrations finish on the Epiphany, opening the gifts that the Three Wise Men brought from the East. All of the key dates around Christmas are opportunities to celebrate and food takes centre-stage in our celebrations. We love a well set table full of Spanish delicacies.

“In our home in the Sierra de Gredos of Madrid, Christmas Eve and Christmas Day always start with an array of Ibérico pork charcuterie, Galician shellfish and my grand uncle's speciality brown or spider crabs al Cava,” continues Allibhoy. “Then starters will be served. There is always a choice of either courgette and almond soup or Madrid-style braised red cabbage.

“Then for main there will be a large grouper baked in the oven with a simple garlic and olive oil dressing. To finish off a big tray of Spanish turrones, which is a type of nougat with almonds or nuts, polvorones, a crumbly shortbread-type cake, and other regional specialities like empiñonados, pine nut marzipan, tejas, canutillos and more.”

Christmas Eve is the big celebration,” says Pizarro, who is from the region of Extremadura, near Andalusía in the south of the country. “On Christmas Eve we go to the market to see what ingredients look amazing for Christmas Eve and Christmas Day.

“It's all about seafood to start. We usually have a spread of tapas that includes prawns, langoustines and octopus – whatever we picked up at the market that day. The main course on Christmas Eve is usually a big fish; maybe a sea bream, sea bass, or besugo al horno. It has to be a big whole fish served in the centre of the table.

 “We always have tapas before the caldereta de cabrito on Christmas Day. Black pudding, orejas and offal are normally on the Christmas Day tapas menu. On Reyes Day we love to have suckling pig, which is placed as the centrepiece on the table and is a real treat.”

Christmas tipples

“As far as drinks are concerned, we always have to have a good sherry,” says Pizarro. “I am always discovering new wineries for outstanding sherries and I like to bring some of these new wines to the Christmas table for my family to try. It has to be good but good doesn't mean expensive. We always have a good Manzanilla and a Pedro Jiménez with our tapas. Cava is a part of all of our Christmas celebrations, and a red and white wine are always on the table.”

“To drink, it has to be a good celebratory Cava,” says Allibhoy.

The cheese board

Cheese is very important to us. We always include cheese as part of the Christmas celebrations,” says Pizarro. “Torta del Casar cheese always features – it's a cheese from Extremadura. We also have a goat's cheese from my local area, served with little toasts and membrillo or a tomato marmalade that I make for Christmas using local tomatoes.”

“In my house we have a metre-long cheese board,” says Allibhoy. “This is generally full of cheese from the Canary Islands like Payoyo and Majorero, which we have before the starters are served.”

It isn't Christmas without…

“It isn't a Spanish Christmas without turrón, a type of Spanish nougat, and polvorón, a sweet Spanish shortbread made with almonds,” says Allibhoy.

“I would say a very good jamón ibérico,” says Pizarro.

New Year's celebration

“Also important is New Year's Eve when we eat seafood and a wide range of tapas including a salmon, which I cure at home,” says Pizarro. “On New Year's Day, I always wake up with a glass of cava and orange juice to ring in the new year!”

“New Year's Eve takes place at my parents' home,” says Allibhoy. “On the menu is smoked salmon with my mum's mayonnaise, boiled prawns, acorn-fed jamón ibérico, white asparagus pudding and an array of canapés. For starters, some years my mother cooks a mushroom and langoustines fricando or if I cook I would normally do lobster bisque. For main we always go for a whole slow roasted drunken brandy turkey.”

“For New Year's Day we would again go out to a traditional asador restaurant, and since part of my family comes from Burgos we have to have some morcilla de Burgos with piquillo peppers and a slow-roasted milk-fed lamb, served with poor man's potatoes.”

Other dishes and traditions

The Twelve Grapes

“On New Year's Eve when the midnight bells chime, we have to eat a grape for every chime,” says Pizarro. “It's something we have done since we were children and I love the tradition.”

“The Twelve Grapes is something every Spaniard has to have no matter where he is in the world,” says Allibhoy.

Caldereta de cabrito

“What we love to eat on Christmas day is baby goat, or kid,” Pizarro says. “The dish is called caldereta de cabrito and it is very popular in my home region of Extremadura. It's a kind of stew made with dry peppers and wine cooked over a medium heat, for less than an hour as the meat is so tender.”

Roscón de Reyes

“Reyes is another word for Epiphany, when the Three Kings bring presents for children in Spain,” says Pizarro. “On Reyes evening we have fish and seafood as well as roscón de reyes, a kind of sweetened circular bread, which I have seen is available in some places in the UK now.”

Tips and recipes

Drunken brandy turkey

“I only eat roasted turkey once a year, but it has to be our family recipe as it is the only moist turkey I have ever tried,” says Allibhoy. “With the help of a syringe, we inject it with half a bottle of Spanish brandy 24 hours in advance and the results are unparalleled. “If anyone tries it, they will never go back to eating turkey any other way.

Kid goat stew, by José Pizarro

Serves 8 to 10

Ingredients:

1 whole kid (approx. 5 kg), jointed

sea salt and freshly ground

black pepper

6 tablespoons extra virgin olive oil

4 choricero peppers, or 1 tablespoon pimentón de la Vera dulce (mild smoked paprika)

4 garlic cloves, peeled

1 bottle dry white wine

2 bay leaves

Method:

Season the kid with salt and pepper. Heat the oil in a big casserole over a medium to high heat, add the kid and the peppers and fry until the joints are browned.

Remove the peppers and pound them in a pestle and mortar with the garlic cloves to make a paste. (If you are using pimentón instead of the peppers, simply add this to the mortar with the garlic.) Mix the wine with this paste and stir it into the meat.

Add the bay leaves, then cover the casserole with a close-fitting lid and simmer slowly for about 1 hour, until the kid is tender. Add water or more wine from time to time to keep the meat moist.

Serve with a green salad. For my dressing I use one part honey, one part Moscatel vinegar and two parts extra virgin olive oil.

Ramsbury Estate Vodka

Ideas and Recipes to Save Energy and Money from Filippo Berio this Christmas

One of the best ways to save time, energy and money when it comes to preparing food is to stick to the principle of “cook once, eat twice”. 

Some great ideas for Italian-inspired recipes that are relatively cheap to make and that freeze well are ragus such as the Filippo Berio Classic Ragu with Tagliatelle, casseroles, Tuscan Bean Stew and Chicken Cacciatore. 

Tomato sauce for pasta is also a great option for batch cooking. For lunch, you could make a big frittata to use up any leftover vegetables and then put it in the fridge to enjoy the following day. 

If you have any stale bread left around, whizz it up in the food processor to make breadcrumbs. Better yet, use them to make Pangrattato which translates to “grated bread”. It's often referred to as “poor man's Parmesan” but it tastes incredible. You toast the breadcrumbs in garlic and oil, then you add them to various dishes, such as pastas, to create a wonderful crunchy texture.

Another brilliant recipe for using up leftover or stale bread is the delicious Pappa Pomodoro. Served hot or cold, this is a thick Tuscan bread soup which is both filling and nourishing, also containing tomatoes, basil, garlic and chilli flakes.

Italians pride themselves on being very thrifty and like to use up leftover ingredients wherever possible. Ribollita is a famous, hearty, Tuscan bread soup and is a brilliant way to use up vegetables. The ingredients vary region to region but the ingredients mainly consist of leftover bread, beans, kale, cabbage, and inexpensive vegetables such as carrot, chard, celery, potatoes, and onion. 

Soup also has the added advantage of warming you up, which is great if you're trying to avoid putting the heating on too often.

In terms of saving money on treats and snacks, stick to the “make and take” principle. You can make energy bars at home to fuel you through the day, which don't require any cooking in the oven.
