Chic Christmas Entertaining the Italian way 

Seggiano’s Festive Pavlova Wreath is a glutenfree Christmas centrepiece, ideal for elegant entertaining or a wow dessert. 

A baked crisp meringue wreath crackles under cloud-like whipped cream, topped with jewel-bright seasonal fruits (pomegranate, figs, berries, clementines), then finished with Seggiano honey or lemon curd for an Italian flair. 

Ingredients 

6 medium egg whites 

330g caster sugar 

TO FILL AND DECORATE: 500ml double cream, selection of fresh fruit - we used figs, raspberries, clementines and pomegranate seeds

Method 

Step 1 - Preheat the oven 

Preheat oven to 150 c 

Step 2 - Prepare the tray 

Line a large flat baking tray with non-stick baking paper and draw a 30cm circle in the centre of the paper. 

Step 3 - Beat the egg whites 

Use an electric whisk or stand mixer to beat the egg whites to soft peaks. Add the sugar a spoonful at a time and whisk on maximum speed until the egg white are glossy and hold stiff peaks when the whisk is removed.

Step 4 - Create the meringue wreath 

Spoon the meringue onto the baking paper in large spoonful’s using the circle you drew as a guide to create a wreath shape. Use the back of a spoon to create some swirls and create a shallow indentation for the cream and fruit to sit in. 

Step 5 - Bake the meringue 

Turn down the oven to 140 c and bake for 1.5 hours. Once cooked, turn the oven off and leave the meringue inside until it has cooled completely. 

Step 6 - Decorate the wreath 

When ready to decorate, carefully peel off the baking paper and transfer the meringue to a serving plate. Softly whip the cream and spoon over the meringue. Top with your chosen fruit and chopped chocolate covered clementines. 

Step 7 - To finish 

For the extra flourish, drizzle with Super Dense Fig Balsamic Glaze. 

Seggiano’s Chocolate and Orange Trifles are the perfect quick dessert for festive entertaining.  

Layers of crunchy Chocolate and Orange Cantuccini biscuits, Sicilian mandarin conserve, silky custard, and whipped cream come together with fresh clementines and dark chocolate shavings for a rich yet refreshing treat. This simple recipe takes just 15 minutes to prepare and delivers all the indulgence of a showstopping dessert with minimal effort. 

Ingredients 

200g SEGGIANO Chocolate and Orange Cantuccini 

2 tbs SEGGIANO Sicilian Mandarin Conserve 

3 tbsp Orange Liqueur 

2 tbsp water 

400g ready made vanilla custard 

150ml double cream 

1 tsp vanilla paste or extract 

2 or 3 clementines - peeled and sliced 

Grated dark chocolate to garnish 

Method 

Step 1 - Prepare the glasses or bowls 

Break the Cantuccini into pieces and lay in the bottom of 4 glasses or small bowls. Reserve a few pieces for decoration. 

Step 2 - Mix the orange sauce 

Mix the mandarin conserve with the orange liqueur and water (use 5 tbsp of water as an alternative to the liqueur if you prefer a non-boozy trifle). Spoon over the Cantuccini, dividing it equally between the glasses. 

Step 3 - Whip the cream 

Softly whip the cream and vanilla together. 

Step 4 - Build the trifle 

Spoon the custard on top of the Cantuccini then alternate with slices of clementine to fill the glasses. Finish with a layer of whipped cream. 

Step 5 - Finishing touches 

Garnish with grated chocolate and the reserved Cantuccini.
