Cambook caramelised nuts are the brainchild of Dormen’s founders Michael Brooks and Angus Cameron, who perfected the recipe in a shed at the bottom of Angus’s garden using a French copper roasting pan. “We borrowed artisan methods used on the Continent and set out to create our own distinctive brand of caramelised nuts, and it seems our recipe of a fine layer of sugar and honey with a pinch of salt has been a great success,” says Angus. “We are delighted to be able to say that we are now stocked in some of the best fine food retailers across the country.”
