Tips for Cooking Well for Less from the Home of 'Cucina Povera'

Finding cheaper ways to prepare delicious, nutritious food is very much on our minds this winter. Whilst Italy is recognised far and wide for its excellent cuisine, the country has 'Cucina Povera',  'peasant cooking' to thank for a many of its celebrated dishes. Which will be ideal for this Christmas.

Even today, much authentic Italian food is made using simple, seasonal ingredients with techniques and recipes passed down through the generations.

Danilo Cortellini, author, founder of Tiramisoo Events and former head chef at the Italian Embassy in London, grew up in humble and rural surroundings and bases much of his cooking style on all that he learnt from his upbringing. Here he shares some simple, cost effective ways to make the most of your ingredients and keep the shopping bills down this winter.

Buy in the staples

Says Danilo: "Every Italian kitchen has plenty of olive oil, dried pasta, fresh pasta and risotto rice. I always have a piece of hard Italian cheese such as Grana Padano in my fridge, which can be used so many ways once you have learned how it works in recipes, not just grated over pasta. It keeps well for weeks in the fridge without changing flavour or texture.

"I always recommend storing in a sous vide bag or covering with cling film as you don't want the cheese to oxidate. Think of it as a seasoning rather than an ingredient and you'll find it elevates so many dishes and reduces the need for salt!"

Plan your meals before you shop

"Be sure to plan your meals for at least several days ahead before you go shopping to avoid buying too much and then having to throw food away.

"Organise a fridge and cupboard raid meals with your friends, partner or family - take all the ingredients that you haven't used in a while or that are at risk of being thrown away and collectively agree what you're going to cook in the coming days. This is a great improv activity that stimulates both your creativity, saving money and doing your bit for the planet at the same time."

Learn some new techniques

"Pickling, freezing, curing, and other preserving techniques might sound tedious but they can all be easily mastered. Learning these skills not only boosts your cooking confidence but helps your ingredients go much further.  With the right jars and wrapping you can even use your new skills to create personalised and thrifty Christmas gifts."

Create dishes with fewer ingredients

He added: "Basil and lemon are hugely popular ingredients in Italy - they add sweetness and acidity to a wide range of dishes. I recommend growing your own basil on your windowsill (outdoors and indoors) which is cheaper and involves less packaging than buying from the supermarket every week.  A cheap and easy family meal is my bucatini cacio-e-pepe with Grana Padano, lemon and basil. and you can add extra lemon, basil, pepper or Grana Padano to taste.

Use the parts you might have previously thrown away

"Whilst I wouldn't recommend eating wax or cheese cloth, most cheeses have rinds that are perfectly edible and that can be a great addition to many dishes. I always use Grana Padano rinds in stocks and sauces and they are a treat in this delicious and nutritious Grana Padano, Spelt and Broad bean soup.

"A more unusual way to use the rind would be to make puffed bites into the microwave. Simply dry your piece of rind with a clean cloth, place it in a dish on a piece of parchment with the rind facing up and bake at maximum power for about 2 minutes to watch the magic happen. Use as a crouton or follow this delicious canapé recipe."

No-Bake Apple Pie Cake

Those lovely folk at the Trewithen Dairy in Cornwall have introduced a no-bake apple pie that will make a delicious addition to the family's Christmas desert menus. And year-round, too, for that matter!

This showstopping dessert couldn’t be more effortless but rewarding to make. You can replace the fruit according to the seasons – strawberries in summer and raspberries in autumn. Not only does it look (and taste) sensational, it comes together in minutes and you don't need to turn the oven on!

Serves 8

300g Trewithen Dairy Cornish Clotted Cream

300g double cream

1 tbsp vanilla extract

75g icing sugar

400g shortcake biscuits – large round biscuits work well, but any size will work

3 large cooking apples e.g. Bramley – peeled, cored and diced

2 tbsp ground cinnamon

50g dark brown sugar

50g Trewithen Dairy Salted Butter

Blackberries to decorate

Line a 20cm cake tin with cling film, leaving a large overhang to wrap on top.

Melt the butter in saucepan over a medium heat and add the diced apples, cinnamon and dark brown sugar. Pop a lid on and cook gently for 3 – 5 minutes, stirring from time to time. Remove from the heat when the apples are soft but still holding their shape.

Mix together the clotted cream with 150ml of the double cream and vanilla extract before sieving the icing sugar into the mixture. Combine thoroughly.

Now it’s time to assemble it. Add a layer of biscuits to the tin and spread a layer of cream over the top. Add a layer of cinnamon apples, then repeat with biscuits, cream and apples, finishing with a layer of biscuits. Press it down firmly, then cover with a place a chill overnight.

To serve, turn the tin over onto a serving plate and discard the cling film. Whip the remaining 150ml cream and spread it thickly over the top. Decorate with blackberries and serve.

As well as a welcome addition to cheese, the onions can be added to a classic Beef Bourguignon for a pop of tart flavour and welcome crunch. Any leftover vinegar will add tang to a sauteed vegetable or spicy sausage pasta sauce.

The Pickled Pears have a warming and full-bodied flavour which comes from the malt vinegar spiked with an unmistakeable blend of cinnamon, allspice and clove spices.  These whole delicate baby pears perfectly accompany cold meats, such as pork or beef as well as enjoyed sliced with sheeps' milk cheese like Pecorino or Manchego. 

They also really hold their own when enjoyed alongside a sturdy blue cheese such as Gorgonzola or Stilton. For a quick dinner recipe, bake a ready-rolled puff pastry sheet topped with gorgonzola, pickled pears and figs.

Fitbakes to launch new Birthday Cake to celebrate listings surge

Fitbakes, which is the UK’s top low sugar delicious indulgent cake brand, is set to launch a new Birthday Cake flavour in October to celebrate securing seven new listings at four different retailers ahead of government HFSS regulations.

The brand, which was founded by nutritionist Ella Rauen-Prestes on her own kitchen table in the Cotswolds back in 2018, has three new listings in Waitrose, one new listing in Tesco, as well as listings in Co-op Midcounties, Holland & Barrett and Selfridges - despite being beset by huge supply chain issues and the continuing war in Ukraine.

The new Birthday Cake flavour of cakes will be topped with a layer of low sugar raspberry jam, a layer of low sugar white chocolate and will be covered in sprinkles made of natural ingredients. 

Restrictions on the placement of HFSS products,  a key part of the government’s commitment to reduce obesity,  come into force in October 2022. This will mean products that are high in fat, sugar or salt, can't be placed in key locations in-store, such as at checkouts, store entrances and aisle ends, to try and reduce impulse buys of 'unhealthy' products.

Ella Rauen-Prestes, said: “Over the last several months, we found several supermarkets were keen to list our products, recognising the fact Fitbakes ticks the box when it comes to providing indulgent healthier alternatives to consumers. 

"Whilst many big brands perhaps aren’t yet ready for the new HFSS regulations, we’re proud Fitbakes has filled the gap in the market for cakes and bars that are indulgent and delicious, but naturally low in sugar and high in protein.”

All of this success comes despite a difficult few months for the company which was beset by supplier issues and even feeling the impact of the war in Ukraine.

Ella explained: “We usually buy protein powder for our cakes from Europe but back in April the shipment was in Ukraine and was bombed in Mariupol. The company then couldn’t supply us with any more protein powder so we had to change the recipe last minute to use a different protein. 

“We have also been hit by the price rises in raw materials such as wheat flour and sunflower oil, which then caused the cost of rapeseed oil, which we use, to increase. We’ve managed to rise above these challenges and are proud to have these seven new listings in top supermarkets, giving more consumers access to healthy cakes and bars on the go.”

Goat’s cheese bonbons

Makes 24

You will need:

300g soft goat’s cheese

3g mixed soft green herbs such as parsley, dill, and chives, finely chopped

2g crushed pink peppercorns

2g toasted sesame seeds

3tbsp toasted hazelnuts, chopped

Method

1. To make your crispy coating, spread the chopped green herbs, pink peppercorns, sesame seeds and

hazelnuts in a thin layer on separate plates. Then, line a baking tray with greaseproof paper.

2. Divide the goat’s cheese into 24 equal portions. Using your hands, roll each portion gently into a small

ball.

3. Roll your goat’s cheese truffles in your coating mixtures, alternating between the herbs, peppercorns,

sesame seeds and hazelnuts to get an even spread of flavours, until all truffles are evenly coated. Place on

your lined baking tray and refrigerate for at least 30 minutes.

4. Serve up and enjoy!


Virgin Earl Grey Martini

Makes 2

You will need:

100ml grapefruit juice

100ml cold strong Earl Grey tea

40ml lemon juice

25ml honey

Few drops angostura or orange bitters

1 free range egg white

Ice to shake

Twist of grapefruit zest to garnish

Method

1. Place two martini glasses in the freezer to chill, preferably an hour in advance.

2. Fill a cocktail shaker (or flask) with ice and add all the ingredients. Shake vigorously for 1-2 minutes or until the shaker feels icy cold and the mixture is frothy.

3. Strain into your chilled glasses and garnish with a twist of grapefruit zest. Serve immediately and enjoy!


Starters worth sharing

Whether you’re sitting down as a family to watch your favourite Christmas movie, or having friends over for a festive tipple, this heavenly baked camembert recipe is a must-try. Perfect for sharing, this classic Christmas dish takes less than half an hour from start to finish and is a great way to get in the yuletide spirit.

Baked Camembert with Roasted Grapes

Serves 4 as a sharing starter

You will need:

250g whole camembert

2 sprigs of rosemary

2 sprigs of thyme

1 clove of garlic, finely sliced

100g red grapes, vine on

1 tbsp olive oil

1 tbsp white wine

1 tsp runny honey

1 ciabatta, sliced

Method

1. Preheat your oven to 200C/180C fan.

2. Remove the camembert from the box and remove the wrapper, then put it back in the box and place it on a baking tray.

3. Using a small sharp knife make diagonal cuts on top of the cheese. Push a few sprigs of Rosemary and Thyme and a few slices of garlic in the grooves. Arrange the grapes on the tray next to the cheese and scatter over the remaining herbs and garlic.

4. In a small bowl, mix the olive oil, white wine, and honey until well combined. Drizzle the mixture over the cheese and grapes and bake in the preheated oven for 20 minutes, or until the cheese is runny and the grapes have softened.

5. Warm the ciabatta in the oven for the last 5 minutes of cooking, then top the cheese with the grapes and serve with warmed ciabatta slices on the side.

Mouth-watering mains

For a showstopping dinner party that will leave your guests impressed, this spiced beetroot tarte Tatin is your new favourite recipe. Ideal as a starter or a vegetarian main, this dish both looks impressive and tastes incredible, with plenty of rich flavours perfectly balanced with fresh herbs.

Spiced Beetroot Tarte Tatin

Serves 4 as a main, or 6 as a starter

You will need:

500g Beetroot peeled and cut into thin wedges

1 red onion, cut into wedges

1 tsp fennel seeds, lightly crushed

1 tsp coriander seeds, lightly crushed

1/4 tsp chilli flakes

3 tbsp olive oil plus extra for drizzling

2 tbsp wine vinegar

2 tbsp soft light brown sugar

500g block puff pastry

40g feta or goat’s cheese

1 tbsp pomegranate seeds

1 tbsp fresh dill, roughly chopped

Flour for dusting

Method

1. Preheat the oven to 200C/180C fan. In a large bowl, toss together the beetroot, onion, fennel seeds, coriander seeds, chilli flakes, olive oil, vinegar, and light brown sugar until well combined. Tip the mixture into a non-stick, oven-proof dish or frying pan and arrange the veg so they cover the base of the pan.

Cover with foil and cook for 1 hour.

2. Lightly flour your work surface and roll out the puff pastry block until roughly the thickness of a pound coin, then cut out a rough circle approximately 2cm bigger than the diameter of your pan - you can use a dinner plate as a guide to make sure your circle is even.

3. Take the pan with the beetroot out of the oven and remove the foil. Allow to cool for a few minutes before pushing the veg into the middle of the pan slightly to make a compact layer. Working quickly, place the pastry on top of the veg and push it in around the edges. Return the pan to the oven and bake for 30 minutes or until the pastry has risen and is golden brown.

4. Allow to cool for 35 minutes - 1 hour before running a pallet knife around the pastry edge to loosen and carefully turning the tart out onto a plate.

5. Just before serving, scatter the cheese, pomegranate seeds and dill over the top and drizzle with a little extra olive oil. Serve slices warm or at room temperature.

Delectable desserts

Dobbies guarantee everyone will have room for dessert when you delight them with this cheat’s cherry trifle. This sweet recipe utilises canned cherry pie filling and shop bought custard for quickness and ease, but your guests will never know!

Cheat’s Cherry Trifle

Serves 10

You will need:

5 sheets of leaf gelatine

2 x 410g cans of cherry pie filling

400g of Madeira cake or madeleines

6 tbsp cherry jam

3tbs amaretto liquor

800ml good-quality shop bought custard

400ml double cream

1 tsp corn flour

1 tbsp icing sugar

15g flaked almonds, toasted

Edible glitter or gold sprinkle dust and gold edible balls to decorate

Method

1. To make the jelly layer, soften the gelatine in a small bowl of water. Tip the cherry pie filling into a saucepan with 100ml of water and gently cook on a low heat on the hob, being careful not to boil.

2. Add the softened gelatine sheets to the cherry pie filling and stir until dissolved. Allow the mixture to cool slightly before transferring to a 20cm trifle dish. Refrigerate for at least 1 hour or until the mixture has set.

3. Cut the Madeira cake or madeleines in half, length ways. Spread with the cherry jam and sandwich back together before cutting into large chunks. Arrange the chunks in a layer on top of the jelly and then drizzle over the amaretto. Gently pour over the custard and level over with a palette knife. Refrigerate for a further 30 minutes - 1 hour.

4. Meanwhile, place the cream in a large bowl and sieve in the icing sugar and corn flour (this will help stabilise the cream if you are making this in advance). Whisk the cream mixture until soft peaks form, then spoon the cream on top of the custard and scatter over the flaked almonds, glitter, and gold balls. Refrigerate until ready to serve.

Everyone will probably be feeling the pinch this year as we head toward Christmas.

So how can you make sure that you, you family and your friends have a good or even fantastic Christmas season this year?

Firstly, there's a little trick that your grandparents or parents could have used to help get through tough or harsh times in previous years.

Make a list of all the food and drinks that you will require for the Christmas season.

Every time you go shopping between now and Christmas buy one of the items from your Christmas list and then tick it off on your list. 

Put this Christmas food and drink in a special separated area, so that they will not accidentally be eaten or drunk early before Christmas! 

What kind of things can you buy in advance?

Flours, cooking fats, cooking oils, herbs, spices, tinned fruits, tinned meats, tinned fish, dried mixed fruits, seasonal nuts, packets of jelly, tins of cream, evaporated milk, condensed milk, tins of custard, tinned deserts, meat pies, etc, etc, etc.

Some shops offer a saving stamp scheme either with physical stamps or digitally and they will offer you some form of a bonus for completing the card. However, this is a little late to start such a saving scheme for Christmas 2022. So perhaps start that for next year, Christmas 2023?

Ingredients

70ml Hattiers Egremont Premium Reserve Rum

500 ml sweet cider 

100g Demerara Sugar

One apple - finely sliced

Two allspice berries

Dash of vanilla essence

Three drops of Angostura Bitters

Method

Combine all of the ingredients and mix well in a large saucepan.

Warm gently over a medium heat, stirring occasionally and being careful not to boil.

Use a sieve or strainer to pour the mixture into a glass and serve hot.

The King's Hat Ingredients 

25ml Hattiers Egremont Premium Reserve Rum

25ml The King's Ginger

25ml Dry Vermouth

25ml Fresh Lemon Juice

15ml Sugar Syrup (also known as simple syrup or gomme)

Unwaxed Orange

Method

Build all of the ingredients in a cocktail shaker with ice.

Shake vigorously.

Strain into a pre-chilled coupe glass.

Garnish with a twist of orange.

BBC Countryfile Christmas in the Park

BBC Countryfile Christmas in the Park will take place for the first time this weekend. And it'll be a live, three day Christmas event, commencing this Friday (10th Dec) with a Grand Opening with BBC Countryfile presenters: Matt Baker, Steve Brown, Tom Heap, Sean Fletcher and Adam Henson cutting the ribbon.

More familiar faces from the show such as Brian Turner, Anita Rani, John Craven, Joe Crowley, Tom Heap, Charlotte Smith and Margherita Taylor will also join the line-up across the weekend.

BBC Countryfile Christmas in the Park takes place from Friday 10th to Sunday 12th December within the splendid grounds of Wiltshire's Charlton Park Estate.

There's Christmas activities to please the entire family across five acres of wonderful parkland. You'll enjoy woodland walks, seasonal crafting and Christmas cooking presented by top chefs, plus local food heroes, the show’s iconic arboretum and special festive tented village will welcome all guests.

The Countryfile presenters will be dropping into feature areas across the show’s weekend run, including Ellie joining a walk with Woodland Trust experts, alongside meeting, greeting and taking selfies with visitors.

Join the Countryfile presenters for a packed programme of six live shows daily, featuring a host of special guests.

Talks on environmental trends to farm life, Friday and Saturday will launch with Countryfile farmers regaling show-goers with stories from their years on the farm, in a talk called Winter on the Farm and how the industry adapts. 

Later on Friday and Saturday and first on Sunday visitors will see the presenters discuss filming Countryfile in the winter months and how the show battles the elements to continue to create award-winning content year after year. 

The stage will also be the scene for a good-old fashioned Christmas quiz, A Question of Christmas, where Countryfile presenters challenge guests on their festive general knowledge!

The Christmas Kitchen for 2021

The party is always in the kitchen and it’s no different at Countryfile Christmas in the Park. The Christmas Kitchen, which has the backing of NEFF and Bosch, will present a wide menu of TV culinary stars, local chefs and food heroes, hosted by one of the countries favourite celebrity chefs, Brian Turner. 

But that's not all! Chef and presenter of BBC1’s Saturday Kitchen, Matt Tebbutt, will also be joining the extensive list of culinary talent cooking up a festive storm over the weekend, with TV Chef and Food Writer, Ching He Huang MBE, Food writer, Xanthe Clay and BBC Masterchef Champion 2020, Thomas Frake. The Countryfile presenters will also join in the festive fun to help cook sustainable Christmas feasts.

The Christmas Shopping Village

But there's more! Timed to coincide with the final two-week Christmas shopping dash, show-goers can purchase their 2021 Christmas shopping from over 200 of the best independent traders and brands in the Christmas Shopping Village, including Gloucestershire Chock Shop and Beckfords of Bath, with thousands of gift and decoration ideas for stocking fillers on offer.

NEFF and Bosch Merry Baking Tent

A baking demonstration tent hosted by Bristol-born, Hobbs House Bakery’s The Fabulous Baker Brothers, Tom and Henry, the NEFF and Bosch Merry Baking Tent will take guests on a festive baking journey of live stage demonstrations, including ‘How do you bake the perfect loaf?’ and ‘What can you do to get the kids involved at Christmas?’ The Baker Brothers will share their secret tips and ideas, as well as welcome guests including award-winning patisserie chef and chocolatier, Will Torrent.

Deck The Halls

Visitors to Deck The Halls will be invited to watch modern and traditional craft makers working, learn how to make Christmas wreaths and decorations with natural materials, plus watch beautiful furniture being hand whittled and the process of candles being made. The weekend will kick off with a demonstration on making a wire robin with Zack from Paper and Wood, followed by beeswax Christmas candle making by Wild Harvest School of Self-Reliance.

Classes throughout the weekend will also highlight sustainable wrapping ideas while making the picture-perfect present for under the tree.

Carol-oke Live

Whether it’s ‘Once in Royal David’s City’ or ‘O Holy Night’, everyone loves belting out a carol! Guests can rest assured that they will get their chance, alongside the Malmesbury Community Choir and online choir, the Wiltshire Wailers, who will be treating visitors to festive carol performances throughout the weekend at the Carol-Oke Live Stage. Guests are encouraged to pick up a song sheet and join in the carolling. 

Winter Woodland Walks

Outdoor lovers can also join The Woodland Trust on a series of expert-guided walks around Charlton Park’s stunning arboretum, where they can learn about the various flora and fauna, as well as how to tend their own gardens over the winter months. Kids can also get involved with Woodland Trust festive workshops, such as make your own reindeer from hazel sticks.

All of this fun will work up an appetite and thankfully there’s plenty of opportunity for delicious festive delicacies at The Park Food Market & Wine Bar, offering a tempting array of street food and of course warming mugs of mulled wine.
